Thanksgiving Day Leftover Makeover

Yesterday many of us probably started off the Thanksgiving meal with enough food to feed an army. After giving thanks and stuffing our faces with the traditional spread, some of us still had enough leftovers to feed the same army. If you are tired of turkey sandwiches or turkey soup here are 5 fun leftover ideas featuring the Big 5: turkey, stuffing, cranberries, mashed potatoes, and gravy:

1. Thanksgiving Egg Rolls. Spread a thin layer of cranberry sauce on an egg roll, add a dollop of potatoes and stuffing, top with shredded turkey and roll firmly. Fry until golden brown and dip in heated gravy.
2. Thanksgiving Quesadillas. Using flour tortillas, spread a mixture of stuffing and gravy on one and a thin layer of potatoes to the other. Top one side with turkey. Grill both sides, cut and dip into cranberry sauce.
3. Thanksgiving Waffles. Spread stuffing into waffle iron. Cook until golden brown. Remove and pour warm gravy over the waffle. Add a scoop of mashed potatoes, pulled turkey, and top with a dollop of cranberry sauce.
4. Thanksgiving Turnovers. Cut puff pastry into 6x6 inch squares. Combine 3 ounces each of stuffing, gravy, turkey, and cranberry sauce. Place filling on each pastry, fold and crimp. Brush with egg wash. Bake at 400 degrees for 20 minutes.
5. Thanksgiving Pizza. Spread gravy onto your favorite pizza dough. Top pizza with crumbled stuffing, potatoes, turkey, and cranberry sauce. Just as you would a traditional pizza. Bake at 400 degrees, slice and serve.
Not only are these unique variations Thanksgiving leftover makeovers, but they are fun to make, quick, simple, and satisfying. Adding cheese to some of these is a great option, however, I feel we can't throw out all our Turkey Day traditions. So, I'll stick with the stars of the feast.
